The distillery's Straight Bourbon Whiskey is already available at Peach Street's headquarters in Palisade. The whiskey expands a line of spirits that already includes Goat Vodka and Jackelope Gin.
"It's awesome stuff," said Head Distiller Davy Lindig. "We're selling a lot of it."
For now, only 200 bottles of the whiskey are available, and only in Palisade. The whiskey costs $58 for a 750 ml bottle. It is proofed at 46 percent alcohol by volume, or 92 proof.
Each bottle is hand-numbered by Lindig and features a black wax-dipped top. The whiskey debuted Aug. 15 in Palisade. Peach Street says its bourbon is the first to be legally made in Colorado.
Rory Donovan founded Peach Street Distillers in November 2005 with Bill Graham and Dave Thibodeau, two Durango residents who formed Ska Brewing Co. with Matt Vincent.
Donovan said in a news release: "Waiting for this bourbon has proved to be quite an exercise in restraint, but the rewards are well worth it."
Whiskey does not need to be made in Kentucky to qualify as "bourbon." The U.S. Alcohol a nd Tobacco Tax and Trade Bureau certifies whiskey as bourbon if it does not exceed 160 proof, is made from a fermented mash of at least 51 percent corn grain and aged for at least two years in charred new oak containers.
Peach Street's vodka and gin are available in Colorado, Oregon, California and Kansas.
